Founded in Wellfleet in 2016 by Nora Whitcomb, Saltmarsh Oyster Bar is a raw bar and wine room where the day's oysters come off the Cape flats and onto crushed ice within sight of the water. Everything is shucked to order — Wellfleet oysters, littlenecks, crudo and a tower for the table.
As a Certified Ocean-Friendly Restaurant, we pour a short, deep list of coastal and low-intervention wine and cook a handful of plates from the day boats — lobster rolls, vongole, and whatever the catch sends in.
